Ingredients
50 g butter
90 g Siúcra Granulated sugar
200 ml double cream
200 g desiccated coconut
Coating
200 g light chocolate
Instructions
Mix the butter, sugar and cream in a saucepan and boil for 5 minutes. Add the coconut. Pour the mixture onto a piece of baking paper and refrigerate. Cut out into small pieces.
Melt the chocolate over a water bath or in a microwave on low power. Dip the coconut pieces in the chocolate and allow them to stiffen on a fresh piece of baking paper.
