Marinated prawns with chilli sauce

Ingredients

  • 300 g peeled prawns
  • 100 ml finely chopped onion
  • 2 skinned, unseeded, chopped tomatoes
  • 1/2 tsp salt
  • 1/4-1/2 tsp coarsely ground black pepper
  • 2 tsp Siúcra/McKinney's Icing Sugar
  • juice of 1 lemon
  • 1 tbsp oil
  • 1 tbsp chilli sauce
  • 100 ml chopped parsley

Mix the prawns with onion, tomato, salt, pepper, Siúcra/McKinney's Icing Sugar, lemon juice, oil, chilli sauce and parsley.

Place in the fridge and allow to draw for at least 1 hour before serving.
