Elderflower Granita

  • 1 1/2tbsp Siúcra Icing Sugar
  • 300ml water
  • 50ml Glucose Syrup
  • Juice and rind of 1 lime
  • 50ml concentrated elderflower cordial
  • Fresh mint
  • 3tbsp white wine (optional)

Mix all ingredients together in a large bowl.  Pour the mixture into a clean high-sided roasting pan and place in the freezer.  Mix regularly using a fork to give fine ice crystals.  Serve in glasses that have been in the freezer - the granita will melt more slowly.
