Elderflower Granita

Ingredients

1 1/2tbsp Siúcra Icing Sugar
300ml water
50ml Glucose Syrup
Juice and rind of 1 lime
50ml concentrated elderflower cordial
Fresh mint
3tbsp white wine (optional)

Instructions

Mix all ingredients together in a large bowl.  Pour the mixture into a clean high-sided roasting pan and place in the freezer.  Mix regularly using a fork to give fine ice crystals.  Serve in glasses that have been in the freezer - the granita will melt more slowly.
