Ingredients

1 kg cleaned pumpkin flesh
300 ml water
1 kg Siúcra/McKinney's Jam Sugar
Juice and grated zest of 1 lemon
30 g fresh ginger, grated or finely chopped

Instructions

Cut the pumpkin into pieces and grate them coarsely. Put the grated pumpkin in a saucepan with the water, cover and simmer for approx. 10 minutes. Add the remaining ingredients and boil for three minutes more. Skim off any scum. Pour into warm, sterilised jars. Seal. Store in a cool place.

You can replace half the pumpkin with finely chopped apple.
