Ingredients
2 tablespoons of Siucra Brown Sugar
2 tablespoons of balsamic vinegar
3 small red onions, sliced
100g of Feta cheese
1 large courgette, cut into long ribbons with a vegetable peeler
1 egg, beaten
1 roll of puff pastry
Instructions
Heat oven to 200C/180C fan/gas 6.
Melt butter in a frying pan over a medium heat. Once foaming, add the onions with a pinch of salt. Cook, stirring regularly, for 10 mins until soft. Add in 2 tablespoons of Siucra brown sugar. Then pour in the balsamic vinegar and cook for a further 6-8 mins until sticky and caramelised.
Roll the pastry out to slightly smaller than an A4 rectangle. Add the courgette ribbons, caramelised onions & feta on top. Leave about 2cm around the edge. Slide onto a baking tray, brush a beaten egg around the edges.
Bake for 10-15 minutes until the cheese is bubbling & the edges are golden brown. Serve with salad & enjoy!
